Viticulture
Rather than owning a single estate, Bruwer Vintners sources fruit from carefully selected vineyard sites across the Cape, choosing locations best suited to each variety. Many vineyards are located in the Polkadraai Hills, known for decomposed granite soils and proximity to the ocean, contributing freshness and structure. The approach is collaborative and site‑driven, with a focus on heritage vineyards, organic-minded farming and low yields to maximise fruit quality and expression.
Winemaking
Winemaking is deliberately low‑intervention, with a strong emphasis on natural processes to allow vineyard character to shine. Grapes are typically hand‑harvested and handled gently, with spontaneous fermentation common and minimal additions in the cellar. Techniques such as whole‑bunch pressing, limited sulphur use and traditional methods like Méthode Ancestrale (pet‑nat) are employed, producing wines that are textured, expressive and true to their origin.
