The success of this domain stems from their incredible stock of old vines that produce small yields that offer perfect grape ripeness, concentration and are deeply anchored on their rootstocks.

Viticulture

With 18 hectares of vineyard on prime sites within Santenay, Chassagne-Montrachet, and Les Maranges to name but a few, the highest of qualities of Chardonnay and Pinot Noir are expressed. Their philosophy in the vineyard is simple, and revolves principally around the respect of and for the vine, nature itself, and the achievements of the previous generations. In short, this is to let each rootstock live, produce fruit and then die – in the most natural way possible. The old vines must be meticulously cared for and in doing so they produce berries of phenomenal concentration and full of "goût du terroir"... a true expression of the place from whence it came. The fruit is itself small – rich in sugars and highly concentrated. With the reds, the thick skins and mature pips give the wines deep colours and silky tannins.

Winemaking

Both reds and whites are treated carefully and gently and with finesse. Fermentation is temperature controlled paying attention to the quality of the juice and the lees. Oak aging, mostly in old barrels with a small percentage of new depending on the cuvée.
