DOMAINE DU PAVILLON, France
Enclosed within its historic walls are the estate’s vineyards, winery, cellars, and an elegant 18th-century manor house. The property spans 19.5 hectares of vines, including nearly 4 hectares of the estate’s prized monopole: Pommard "Clos des Ursulines." As at Domaine du Clos Frantin in Nuits-Saint-Georges, organic viticulture is practiced with a constant focus on preserving the natural balance of the ecosystem. The winery was completely modernized in 2016, allowing for the vinification of more single-vineyard plots from the Côte de Beaune. Vats of varying sizes were introduced, perfectly tailored to Burgundy’s terroir-driven, single-vineyard approach. Beginning with the 2018 vintage, the wines of Domaine du Pavillon, like those from the group’s other estates in the Côte-d'Or and Mercurey, carry official certification as organic wines.
Viticulture
The property produces wines from some of the regions top cru; Pommard "Clos des Ursulines" Monopole: Nearly 4 hectares of this exclusive, walled vineyard are dedicated to Pinot Noir, producing wines with depth and structure. Corton Grand Cru "Clos des Maréchaudes" Monopole: This unique 0.54-hectare walled vineyard is the only one in the Côte de Beaune classified as both Premier and Grand Cru, yielding wines of remarkable harmony between richness and finesse. Corton-Charlemagne Grand Cru: Situated in the "Languettes" climat on the south/southeast-facing slope of the hill of Corton, this 2.97-hectare plot produces powerful yet refined white wines. Meursault: The estate's Meursault wines come from three plots totaling 3.3 hectares, offering complex, rich, and silky profiles with balanced freshness. Aloxe-Corton: Including the "Les Crapousuets" climat, this 1.16-acre plot features deep, clayey soils, contributing to wines with intense aromas and velvety tannins. catalogue.albert-bichot.com Premier Crus: The estate also cultivates vines in prestigious Premier Cru sites such as Beaune "Clos des Mouches," Pommard "Les Rugiens," Volnay "Les Santenots," and Meursault "Les Charmes," each contributing to the diversity and quality of Domaine du Pavillon's portfolio. All vineyards are managed organically, with certification beginning with the 2018 vintage, reflecting the estate's commitment to sustainable viticulture.
Winemaking
At Domaine du Pavillon, winemaking is an art of precision and respect for nature. In the cellar, gentle, hands-off techniques are used to capture the purity of the fruit and the subtle expression of each terroir. Fermentation takes place in temperature-controlled wooden vats, often with native yeasts, allowing the wine to ferment naturally and authentically. Wherever possible, gravity—not machinery—guides the wine’s journey, preserving its elegance and integrity. Each cuvée is aged with precision in carefully selected oak barrels, adding depth and complexity without masking the wine’s true character. The result? Wines that are organically grown, expertly crafted, and beautifully expressive—offering a true taste of Burgundy, vintage after vintage.
