Domaine Chatzivariti miniMus (PGI- Slopes of Paiko), Xinomavro, Kilkis, Goumenissa, Greece, 2021

Producer Profile
Founded in 1994 by Vagelis Chatzivaritis, the Chatzivaritis Estate is located in the heart of Goumenissa, Macedonia, Greece.
The winery spans 20 hectares of organically farmed vineyards across the regions of Bindabla, Filyria, Plagia, Pentalofos, and Griva. The estate cultivates indigenous Greek grape varieties such as Xinomavro, Negoska, Roditis, Malagousia, Muscat, and Assyrtiko, while also growing small plots of international varieties like Sauvignon Blanc, Merlot, Chardonnay, and Cabernet Sauvignon. In 2017, Vagelis’ daughter Chloi returned to Greece after winemaking studies in France and Portugal. She brought with her a modern, low-intervention philosophy, introducing natural winemaking techniques, including pétillant naturel and carbonic maceration.
Viticulture
This wine is made from 100% Xinomavro grapes, sourced from an organically cultivated vineyard in Filyria, located within the renowned wine-growing region of Goumenissa. The vineyard is arranged in a linear layout, allowing for optimal vine management and sun exposure. The soil is a medium-textured sandy clay, contributing to the grape's unique expression and the wine’s overall structure and complexity.
Winemaking
Grapes are carefully hand selected and crushed before being allowed to go through spontaneous fermentation in INOX tanks, without additives, fining or filtration and with very low sulfur level, added before bottling. Following fermentation, the skins are gently pressed, and the wine is aged in French oak barrels for an additional 4 months.
Tasting Note
This elegant red wine captivates with its vibrant violet hue and remarkable clarity. On the nose, it offers a seductive bouquet of juicy red fruits, blackcurrant, and ripe cherry, beautifully layered with notes of liquorice and sun-dried tomato. On the palate, it delivers a refined structure, featuring well-integrated tannins, bright acidity, and a long, satisfying finish. A true expression of character and finesse, this wine is perfect for those who appreciate depth, complexity, and authenticity in every glass.
Food Matching
An ideal companion to grilled lamb, slow-cooked beef, or hearty tomato-based stews. It also complements Mediterranean cuisine, such as moussaka, roasted vegetables with herbs, and aged cheeses
