Domaine Philippe Chavy, Bourgogne Chardonnay, Côte de Beaune, France, 2023

Producer Profile
Philippe Chavy took over the reins of this wealthy domaine from his father in 2002 with a little more than 3 hectares of prime sited vineyards.
The domaine now extends to just over 8 hectares, with some thirty individual parcels scattered throughout the neighbouring villages of Puligny Montrachet (from his father’s side of the family) and Meursault (through his maternal side). Soil is worked by ploughing; there is strictly no use of herbicides or insecticides and for several years, Philippe has followed the cycles of the lunar calendar when determining work in the vineyards and cellars.
Viticulture
Grown on clay-limestone soils near Puligny and Meursault, from younger vines tended with sustainable practices. Careful vineyard work and low yields ensure expressive fruit and balance.
Winemaking
The grapes are pressed whole, without treading, and spend 15–21 days in tank before completing malolactic fermentation in barrel. Ageing follows for 11 months in 228L barrels, none new, with wood ranging from 5 to 10 years old. The wine is racked five months prior to bottling and blended in stainless steel, for a total maturation of 16 months.
Tasting Note
Fresh and charming, this Bourgogne Blanc offers aromas of lemon zest, white peach, and a touch of acacia flower. The palate is crisp and lively, with citrus and orchard fruit balanced by a clean mineral finish and a subtle creamy undertone.
Food Matching
Ideal with grilled sea bream, herb-roast chicken, or creamy leek tart.
