Viticulture
The Palomino grapes are sourced from vineyards in the historic Sherry region of Andalucía, where the warm Mediterranean climate and cooling Atlantic influences create ideal conditions for grape cultivation. The distinctive albariza soils, rich in chalk and limestone, retain moisture during the hot summer months and contribute to the freshness and finesse of the fruit. Careful vineyard management ensures healthy grapes with balanced sugar levels and acidity, providing the foundation for quality Sherry production.
Winemaking
Following fermentation to a dry base wine, the wine is fortified and aged according to the traditional solera system. Amontillado begins life under a protective layer of flor yeast before continuing its maturation through oxidative ageing after the flor naturally disappears. This dual ageing process creates its distinctive combination of freshness, concentration and nutty complexity, resulting in a Sherry of great depth, elegance and persistence.
Tasting Note
Bright amber in colour with complex aromas of toasted hazelnuts, dried orange peel, walnut and caramel, underscored by savoury notes of polished wood and sea spray. The palate is dry, elegant and intensely flavoured, combining nutty richness with vibrant freshness. Layers of dried fruit and spice lead to a remarkably long, savoury finish that is both refined and deeply satisfying.
Food matching
An outstanding accompaniment to Jamón Ibérico, roasted almonds, mushroom dishes, consommé, aged Manchego, smoked meats and game terrines. It also pairs beautifully with roast poultry, rich seafood dishes and hard, mature cheeses, where its savoury complexity and freshness complement a wide range of flavours.
