Surely one of the hardest working producers in Burgundy, the truly hands on ‘salt of the earth’ Jean-Philippe Fichet manages manicured vineyards which produce superb quality fruit.

With decades of experience, Jean-Philippe is making classic but refined white Burgundies with great terroir definition resulting in many well-deserved accolades for these truly exceptional wines. Having tried and tested, finely tuning his skills for over 30 years in the vineyards and winery, results in wines as close to perfection as you could hope. His wines show excellent balance between fine fruit ripeness and concentration yet with telling vibrancy, minerality, energy and true precision. Jean-Philippe's dedication to his craft and his meticulous approach to both vineyard and cellar practices have earned him recognition among Burgundy enthusiasts and collectors worldwide.

Viticulture

Sourced from vines near Meursault and Auxey-Duresses, planted on limestone-rich soils. Fichet farms with a deep respect for terroir, practising lutte raisonnée and encouraging biodiversity. Yields are kept low to ensure intensity and clarity of flavour.

Winemaking

Grapes are hand-harvested, gently pressed, and fermented with native yeasts in a mix of barrels and tanks. Ageing occurs over 12 months on fine lees in French oak barrels (with a modest proportion of new oak, around 10–15%) to add texture and gentle spice while retaining the wine’s brightness and purity.

Tasting Note

Aromas of crisp apple, lemon peel, and white flowers mingle with hints of blanched almond and struck flint. On the palate, it’s focused and energetic, with citrus and orchard fruit at the core, framed by taut minerality and a clean, refreshing finish.

Food Matching

Crab and citrus salad, pan-fried trout with almond beurre noisette, or ricotta and herb-stuffed courgette flowers.
