The vineyards, primarily planted on Kimmeridgian limestone and flint soils, benefit from organic and biodynamic treatments that enhance the vitality of the vines and the expression of the terroir. Hand-harvesting is standard to ensure optimal grape quality. The estate has been certified biodynamic since 2005 and organic since 2008 .
Winemaking
Winemaking at Domaine Vacheron emphasises minimal intervention to preserve the purity and freshness of the Sauvignon Blanc grapes. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for clean, precise fruit expression. The wines typically see little to no oak influence, maintaining vibrant acidity and crisp minerality that highlight the distinct character of the Sancerre terroir.
