Viticulture
Some of the vines are approaching 90 years of age, the terroir here is classic Châteauneuf-du-Pape territory; a sub soil of marine sandstone covered by Alpine deluvium or galets roulés. The soils are managed with light ploughing and sustained by natural compost. Yields are generally low, or kept under control by green harvesting during the summer.
Winemaking
The vinification process lasts 18 to 20 days with regular pigeage. The wines are matured in a combination of vats and oak casks for at least 18 months, with a final assemblage taking place in January.
Tasting Note
Deep and brilliant, purple-red colour. There is black fruit (blackcurrant and cherry) spices and creamy vanilla. The spice and ripe fruit appear on the palate with an elegant woodiness amongst the harmonious tannins. Lengthy on the finish with a touch of liquorice and pepper.
Food Matching
This full-bodied wine, pairs well with rich, meaty dishes like game, lamb, and robust stews, as well as certain cheeses and roasted vegetables.
