The rigorously talented Thomas Morey, younger son of Bernard, has set up his cellar in the old family house in Chassagne-Montrachet, he represents the tenth generation of the Morey family in Chassagne-Montrachet.

Diligent, serious, a hardworking perfectionist, he has renovated the winery into a very clean and organised operative. He works around 13 hectares diligently and skilfully, having already established himself as one of the stars of the appellation. His style is different from that of his father, proving to be more linear and tauter with more initial restraint which is closer to the modern idiom of fine white Burgundy.

Viticulture

The Bourgogne Blanc originates from a specific plot of vines within the Morgeot climat, a renowned appellation in the Côte de Beaune. This particular plot, known as "Les Fairendes", was planted in 1974. It is characterised by its stony red soil, which is shallow near the surface but deepens as it descends the slope. The underlying bedrock is composed of white, heavy, compacted clay.

Winemaking

Only indigenous yeasts and no sulphur during vinification. Otherwise, very traditional Burgundian winemaking techniques. The wines are filtrated very softly. The Domaine, adhering to organic viticulture practices, carefully cultivates the grapes in this terroir. The early ripening nature of the Chardonnay grapes in this region requires vigilant monitoring to ensure optimal harvest timing. This attention to detail is crucial in preserving the delicate flavours and aromas of the wine. 11 months ageing including malolactic fermentation.

Tasting Note

A refined and quietly confident expression of Chardonnay, showing a pale lemon hue with green reflections. The nose offers a gentle yet layered bouquet of crisp green apple, white peach, lemon zest, and subtle almond and floral notes, underpinned by a whisper of flinty minerality. On the palate, it is poised and pure, with fresh acidity and a silky texture. Clean citrus fruit and orchard flavours are balanced by a light creaminess and a mineral-driven finish. Understated yet beautifully precise.

Food Matching

Grilled sole with lemon butter, or a simple yet luxurious risotto bianco finished with parmesan and olive oil.
