DOMAINE NICOLAS ROSSIGNOL, France
Nicolas Rossignol started working on the family estate of Rossignol-Jeanniard in 1994 and has since held winemaking roles at estates of the likes of Domaine Joseph Voillot, Louis Latour, Vieux Télégraphe (Châteauneuf-du-Pape), Boschendal (South Africa), and Château La Cardonne (Lafite-Rothschild). In 1997 he launched his own domaine with around 3ha in Volnay, Pommard, Beaune, Aloxe-Corton and Pernand-Vergelesse. Over the next 15-20 years, he expanded to approaching 20ha across 30 appellations, including multiple Premier Crus. In summary, Nicolas Rossignol blends both heritage and modern winemaking, combining traditional Burgundian practices with biodynamic principles and meticulous cellar work. His wines showcase clarity, balance and a strong sense of place across a wide range of Burgundian appellations.
Viticulture
Practicing organic and biodynamic-inspired reasoned viticulture, avoiding the use of chemical herbicides and utilises lunar calendar guidance, light ploughing, vine yield regulation through selective no-hedging, and 100% hand-harvesting into small 8 kg crates as his approach in the vineyard.
Winemaking
Nicolas employs indigenous yeasts, prefers stainless steel fermenters, with gentle extractions (mostly pump-overs). Wines are typically aged for 12–20 months in barrel, using under 50% new oak—often sourced from Bruno Lorenzon. He adheres to a process of no racking, late malolactic fermentation, and bottles unfiltered and unfined
